Simply7 Thanksgiving Stuffing

Gluten free, vegetarian, and Simply Delicious!

Here’s what you’ll need:

  • 2-1/2 cups  Roasted Red Pepper Hummus Chips (if you can’t find this flavor, Sea Salt will work too!)
  • 2 cups cooked rice
  • 1/4 cup toasted pine nuts
  • 2 Tbs red bell pepped diced
  • 1/2 cup red onion diced
  • 1clove garlic minced
  • 1 cup mushrooms chopped
  • 2 cups chopped spinach
  • Olive oil
  • 1 egg
  • 1 tsp dried basil
  • 1/4 tsp dried oregano
  • 3/4 cup feta cheese
  • 1/4 cup broth
  • 1/2 tsp salt
  • 1/4 tsp pepper

Sauté onion, bell pepper, garlic in olive oil. Add spinach and mushrooms.  Cook a few minutes until spinach wilted.  Remove from heat.  In mixing bowl add rice, vegetable mix, pine nuts, spices, beaten egg, crumbled feta.  Mix together. Add broth until moist. Mix in broken chips.  Salt and pepper to taste.  Put in buttered casserole.  Top with more crumbled chips. Bake at 350 for 30 minutes. Serves 6-8. Enjoy!
